Mango Salsa

So, here we are, mid March, and yesterday Paito and I woke up to lots and lots of snow. I had actually planned to make BBQ chicken for dinner last night, in hopes of posting the recipe, but due to the snow I decided to make something that could be made from within the comfort of my warm and cozy kitchen. So instead I made something that tastes like summer; Mango Salsa! I know it sounds strange, and honestly when I first came across this recipe, I wasn't too sure if I would like mango all mixed up with spicy jalapeños and cilantro, but I'm telling you guys, it works! It's light and refreshing, and depending on how spicy you want it, delivers quite a kick. If you want it less spicy completely remove the jalapeño ribs, I just took out the seeds and it was perfect for us.

Mango Salsa

DIFFICULTY: EASY • PREP TIME: • COOK TIME: • SERVINGS: 1

INGREDIENTS:

  • 1 medium or large mango, finely diced
  • 3 tablespoons red onion, finely diced
  • 2 tablespoons chopped fresh cilantro
  • 1 fresh jalapeño, seeded and finely diced
  • Juice from 1 lime (about 2 tablespoons)

PREPARATION:

To make the salsa, combine all the ingredients in a small bowl and season to taste with salt and black pepper. Store in refrigerator.
